This is a great camping “hack” that puts a delicious seasonal spin on traditional French toast. So, pour yourself a cup of coffee and embrace the season with this festive recipe!
To make Pumpkin Pie French toast, we’ll create the pumpkin pie “filling” by combining sweet Mascarpone cheese, pumpkin butter, pumpkin pie spice, and maple syrup to create a spreadable schmear that’s loaded with pumpkin flavor. Then, we’ll make the French toast.

- 1 cup Mascarpone cheese
- ⅓ cup pumpkin butter
- ½ teaspoon pumpkin pie spice
French Toast
- 4 eggs
- 1 cup milk
- 1 tablespoon maple syrup
- 1 teaspoon pumpkin pie spice
- 12 slices Texas toast
- 2 tablespoons butter
- ½ cup chopped pecans
- Maple syrup to serve
Instructions
Mix the Mascarpone cheese, pumpkin butter, and ½ a teaspoon of pumpkin pie spice in a small bowl. Set aside.
In a separate dish, thoroughly beat the eggs, milk, a tablespoon of maple syrup, and a teaspoon of pumpkin pie spice.
In a nonstick pan over medium heat, warm a tablespoon of butter.
Dip the bread into the egg/milk mixture. Let the bread absorb the liquid for a few seconds. Then, flip and repeat. Remove the bread and let the excess mixture drip off.
Place the bread in the pan. Repeat with a second (and third, if your pan allows it) piece of bread.
Once the toast is golden on one side (three to four minutes), flip and cook the other side for an additional two minutes or so. Remove and set aside.
Heat the second tablespoon of butter and repeat the process until all the toast is cooked.
To serve, spread the Mascarpone mixture on top of the toast, sprinkle with pecans, and repeat with another slice to “stuff” the French toast.
Drizzle maple syrup and remaining pecans over the top and enjoy!
